First Day for NC State Volunteers

The first day begins with a tour of Project Ix-canaan, during which the students donate, unpack and put away their donation of medicines in the Ix-canaan pharmacy. This is a huge help to the operation of the clinic and to the people who can seldom afford the cost of antibiotics, antimicotics (anti-fungals), analgesics, diabetic meds or other necessary medicines.

After a tour of the Ix-canaan Clinic and the Library/Computer Center, the group walks up the hill for two blocks to the Women’s Center. The president of the group, Doña Juana, takes the group on a tour of the Forest Garden. Then the group has a lesson in “tortilla making”

Everybody had a chance to make their own and to eat some fresh hot tortillas when they were cooked.

Tamales are party food here in Guatemala. Wherever there is a group of people gathered, be it a birth, a birthday, a wedding, a funeral, Easter, Christmas or New Years, chicken tamales are the first menu item. Tamales are made from a corn maza, mixed with oil and herbs, filled with chicken and sauce and wrapped in banana leaves to cook.

After this delicious lunch of tamales, bean salad on crunchy tostadas, fresh pineapple juice and dessert, prepared and served by the Ix-canaan Women’s Group, the volunteers left to experience the jungle from the treetops at the Ruta del Mono Canopy Tour.
